Pimento Cheese Sandwiches

I've been nostalgic for the tastes of home lately and have been desperately craving some of the staples from my childhood. Some of the Southern classics I grew up on include pulled pork sandwiches, fried catfish, garden fresh tomatoes and, brace yourselves, pimento cheese sandwiches. Mmmmmm...

There's something about grated sharp cheddar cheese, tangy mayo and the sweet taste of pimento mixed together and slathered on two pieces of toasted white bread that tastes just like home.

features a recipe for pimento spread in her 2008 cookbook The Comfort Table. As she details, this spread is delicious on toasted bread as a light lunch or treated as a dip served with crackers and fresh veggies.

Katie Lee's Pimento Cheese Spread
Yield: 2 cups
Prep Time: 15 minutes

4 cups of shredded sharp Cheddar cheese
1/2 cup of mayonnaise
1/4 cup pimentos, whole or chopped, drained
1 tablespoon pickle relish
1 teaspoon onion powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Dash of hot sauce, optional (use as much or as little as you like)
